Full Metal Alchemist is probably the only series I ever took an effort to watching the entire thing... Most anime seems far too bizarre or doesn't make much sense for my liking.
However I few other Animes I enjoyed..
2. Death Note (I kinda lost my interest in it after N was introduced)
3. Ghost in the Shell (violence and sci-fi)
4. Case Closed (Mysteries are always fun, but the general plot was weird...)
and maybe I'll put .hack/sign for number 5... did kinda stick to me since the story revolved around a online game, which was origonal at the time I saw it.
I'd also add the origonal gundam wing, but since I've only seen 1 or 3 episodes, I'm not stating it as a favorite until I see the most of the series.

I think I'll just pick one from each genre.
Action: Black Lagoon (yes, there is one that I like)
Fanservice: Magister Negi Magi (oh dear god, I shouldn't but I do)
Drama: Now & Then, Here & Now (hide the sleeping pills)
Romance: Koi Kaze (utterly gut-wrenching)
Martial: Gundam 08th MS Team (sorry guys, the ending of Galactic Heroes stretched too much)
Slice-of-Life: Yokohama Shopping Trip Log (Alpha is simply adorable)
Comedy: Irresponsible Captain Tylor (you either love him or hate him)
Sci-Fi: Planetes (the logical extension of current space policy and global treaties)
Metaphorical Reflection: Kino's Journey (had to invent a genre for this, it's too deep for normal entertainment purposes)
