Robotech is probably one of the most unavoidable on the subject, Air is a refreshing not too known anime and record of lodoss war is a good old anime with the theme of medieval times and fantasy.
hrm here's my quick opinion on the ones listed in the last two posts:
Kimi Ga, very well renowned, couldn't be considered obscure
Last Exile: Domestic release, enough said
Beck: never heard of it
Robotech: if you do this one, you must do Macross first, because robotech is greatly influenced by Macross and imo rips it off and gets all the credit
Air: another of those i've heard on the whispers of tongues but never researched myself
Record of Lodoss: i've heard it in the ether, i myself don't know much about it
